Cheese Muffins


  • 1 cup (250ml) semi-skimmed milk
  • 3 tablespoons melted butter
  • 1 egg
  • 200g cheddar cheese
  • 1/2 teaspoon salt
  • 1 tablespoon of baking powder
  • 400g Laxey Glen Mills Wholemeal flour


  1. Lightly oil a 12-hole muffin tin and preheat the oven to 200C.
  2. Put the Milk, butter and egg into a bowl and mix together, then add the other ingredients and blend until just mixed.
  3. Fill the muffin holes and sprinkle a little extra grated cheese on top of each muffin.
  4. Bake for 15-20mins or until the muffins are golden brown and spring back when touched.
